  • Jasper Hill Farm Cabot Clothbound Cheddar — Black Label Select  (1-pound wedge)
    The best of the best of our Cabot Clothbound, our black label batches are hand-selected by our sensory team for their excellence in representing what the cheese can be. This approachable but complex natural-rind, bandaged cheddar with a crumbly yet smooth texture and nutty aroma. The flavor is deeply savory with chicken broth notes with caramel sweetness to the finish. Winner of the 2006 American Cheese Society’s Best of Show award!

    Grafton Village Cheese Co. — Maple Smoked Cheddar (8-ounce brick)
    An unpasteurized milk cheddar, this cheese has been cold-smoked over a blend of hardwood chips. An iconic Vermont cheese, Grafton’s cheddar has a subtle smoked flavor with a smooth, buttery finish.

    Plymouth Cheese — Plymouth Cheddar (8-ounce block)
    This original Coolidge family formula was discovered by Jesse Werner on a frayed scrap of paper, taped to the walls of the old Plymouth factory. Aged for one whole year, this is a full-bodied cheese, rounded with the perfect balance of cream and tang. It’s the most historic of the English varieties — an old-world recipe with a sharp, rich flavor profile that lingers, like a passed down story — and said to be closest to what the settlers of the 1600s enjoyed.

    Shelburne Farms — 2 Year Cheddar (8-ounce block)
    An extra sharp raw milk cheese and Shelburne’s best-known cheddar. Aged for a minimum of 2 years, this cheese has the classic Vermont cheddar cheese profile—acid-forward sharpness, some minerality, and sweetness on the back end. Great to snack on any time of year, especially during apple-picking season and deep winter days.

    Vermont Farmstead — Governor’s Cheddar (7-ounce square)

    Governor's Cheddar is Vermont Farmstead’s sharpest cheddar, and is an annual winner at the American Cheese Society Awards. This Farmstead Cheddar is aged for over 1 year and was named to commemorate a visit by Vermont Governor Peter Shumlin to their cheese room. Subtle honey note and lush butter and fruit tones balance the cheddar bite and tyrosine crystals.
