THE STORY
Caspian is a Jasper Hill Farm original with its stylistic roots in the French region of Savoie. This cheese takes its name from Lake Caspian—Greensboro’s pristine glacial lake that sits at the center of our community.
A Savoie-inspired tomme has been a style that we’ve long wanted to give an American twist. Caspian’s natural rind is a kaleidoscope of cultures with mottling of white, gray, and brown flora with rosy undertones. Its concave sides signal a unique approach to the classic tomme style, which achieves a dual-textured interior: a more friable center is enveloped by a thick, smooth creamline just beneath its rippled rind.
SENSORY
On the palate, Caspian presents a vibrant range of flavors. Its bright, lactic, herbaceous center evolves to cultured butter and mushrooms along the outer edges. Pair with a tart Geuze to accentuate Caspian’s citrusy center or a Pinot Noir to complement the earthy notes. Enjoy with pork rillettes, crusty bread, and seasonal fresh fruit for an elevated cheese board.
