Caspian has a kaleidoscopic natural rind that encases this cheese’s unique paste. Inside, Caspian has a range of textures and flavors and sports a chalky, lactic core with lemony brightness. Near to its rind, the paste breaks down into a soft texture with a mushroom aroma much like a bloomy rind cheese.Whitney (1-pound wedge)

Our signature seasonal raw milk cheese. Winnimere is best enjoyed by peeling a way a bit of the top rind and diving in with spoon and some friends. If portioning for retail, an effort should be made to sell the remainder of the wheel before day’s end. Withersbrook Blue is a rich, spreadable blue that has notes of sweet fermented fruit, mild winter spice, and rich buttercream. After 60 days of cave-ripening, this cube is placed into a special pouch and immersed in Eden Cider’s Heirloom Ice Cider. It is perfect for pairing with both sweet and savory foods: serve it up with raw honey or sprinkle it atop seared ribeye! -
